Grandma Jean's Double Chocolate Pie
- 1 pie crust, cooked
- 2 12 ounces unsweetened chocolate squares
- 3 cups milk, divided
- 1 13 cups sugar
- 3 tablespoons flour
- 3 tablespoons cornstarch
- 12 teaspoon salt
- 3 egg yolks
- 2 tablespoons butter
- 1 12 teaspoons vanilla
- 1 cup heavy whipping cream
- 12 cup powdered sugar
- 2 tablespoons cocoa
- 12 teaspoon vanilla
- Melt chocolate squares with 2 cups milk in saucepan over medium heat, stirring constantly.
- Bring to a boil and immediately remove from heat to cool slightly.
- Combine sugar, flour, cornstarch and salt.
- Set aside.
- Beat egg yolks with 1 cup milk.
- Blend in dry ingredients, mix well.
- Add the melted chocolate mixture, mix well.
- Cook over medium heat.
- Bring to a boil and continue boiling for 3 minutes, stirring constantly.
- Remove from heat.
- Add butter and vanilla.
- Beat again with electric mixture (while still fairly hot).
- Cool, then pour into pie shell.
- Cover with plastic wrap and cool overnight.
- TOPPING: Whip cream until slightly thick.
- Add remaining 3 ingredients and beat until stiff.
- Place on top of chocolate pie that has cooled overnight in fridge.
