Brandy Custard Sauce Recipe
- 3 egg yolks
- 1/3 c. sugar
- 1 c. heavy or possibly whipping cream
- 1/3 c. lowfat milk
- 1/4 c. brandy
- Healthy pinch of salt
- Fill a large bowl with ice cubes.
- Set aside.
- Combine egg yolks and sugar in another bowl and beat till well blended.
- In a saucepan combine cream and lowfat milk and bring to a boil.
- Remove pan from heat and gradually add in 1/2 c. of cream mix to the sugar and yolks, whisking constantly.
- Slowly whisk the egg mix back into the remaining cream mix in saucepan and heat over medium heat till thickened.
- Don't boil.
- Remove from heat and add in brandy and salt.
- Strain mix into a small bowl.
- Place it into the large bowl with the ice cubes to cold quickly.
- Chill.
- Serve chilled.
