Grilled Pineapple
- 4 slices fresh pineapple (about 1 1/2 in)
- 2 lemons
- 2 teaspoons honey
- ground pepper
- Slash the tops of the pineapple in a crisscross pattern.
- Broil until the pineapple turns caramel, but not brown.
- Boil the lemon juice and honey in a saucepan for 2-3 minutes.
- Remove from heat to cool, and season to taste with pepper.
- Serve as is, or with a scoop of ice cream.
- (You could also serve with ricotta or goat cheese).
