Sweet Cucumber And Orange Salad

• 1/4 cup avocado oil
• 1 tablespoon fresh lemon zest
• 1 tablespoon lemon juice
• 2 teaspoons honey
• 2 large oranges
• 1 English cucumber
• 2 cups fresh mint, loosely packed

1. Place ingredients in a screw-top jar.
2. Shake well.
