Vegetable And Chicken Stir Fry Recipe
- 3 c. minute rice or possibly 2 c. raw rice
- 6 boneless, skinless chicken thighs, cubed
- 2 tbsp. butter
- 2 sm. zucchini squash
- 1 sm. yellow crookneck squash
- 3 green onions
- 2 Large eggs, beaten
- 1 (10 ounce.) pkg. frzn broccoli
- 1 c. & 2 tbsp. soy sauce
- 2 tbsp. sherry
- Cook white rice according to package directions.
- Stir fry chicken.
- Mix together 1/2 chicken, zucchini, onion with 2 Tbsp.
- soy sauce and 2 Tbsp.
- sherry.
- Mix together 1/2 chicken and vegetables.
- Heat 2 Tbsp.
- butter in pan and saute/fry vegetable - chicken mix.
- Add in 1/4 c. soy sauce.
- In separate pan, mix together remaining chicken, white rice and 3/4 c. soy sauce.
- Stir fry 5 min.
- Add in Large eggs.
- Cook till Large eggs are done.
- Serve.
- Serves 6.
