Jennifer's Holiday Rum Balls
- 2 tbsp. cocoa powder
- 1 cup powdered sugar
- 1/4 cup dark rum (or bourbon)
- 1/2 cup corn syrup
- 2-1/2 cup Vanilla wafers, finely crushed
- 1 cup pecans, crushed (optional)
- 1/2 cup granulated sugar
- Mix cocoa and powdered sugar in medium bowl.
- Add in rum and corn syrup.
- Stir in wafers and nuts, mixing well.
- Wet hands with water.
- Roll the wafer mixture into small balls approximatley 3/4-1 inch in diameter.
- Roll the rum balls in the granulated sugar.
- Store in air tight container.
- Best eaten after a few days in the container.
