Bruschetta with Golden Tomatoes

  1. Mix the tomatoes, basil, garlic, olive oil and white wine vinegar in a bowl.
  2. Add salt and pepper to taste.
  3. Set aside to let the flavors meld while you make the bruschetta.
  4. Preheat the broiler.
  5. Slice the bread and place on a baking pan and brush with olive oil.
  6. Place the toasts under the broiler and remove when golden brown around the edges.
  7. To serve: Smear a piece of toast with goat cheese and top with the tomato mixture.
  8. Enjoy!
  9. Note: Instead of mincing garlic and putting it in the tomato mixture, the traditional way is to rub the toasts with the garlic clove sliced in half.
  10. This method has a milder garlic flavor.
