Roasted Onion & Garlic Crostini

  1. Heat oven to 400F.
  2. Place onion, red pepper and garlic in single layer onto greased 15x10x1-inch baking pan.
  3. Bake 25-30 minutes or until vegetables just begin to brown.
  4. Cool.
  5. Remove garlic from skins.
  6. Chop onions, peppers and garlic.
  7. Combine chopped roasted vegetables, cheese, tomato, sage and salt in bowl.
  8. Place bread slices onto ungreased baking pan.
  9. Bake 3 minutes.
  10. Spread about 2 tablespoons onion mixture onto each bread slice.
  11. Continue baking 5-6 minutes or until cheese is melted.
  12. Sprinkle with parsley, if desired.
