Cantonese Sweet And Sour Spam Recipe
- 1 Tbsp. veg. oil
- 6 x green onions cut 1/4" slices
- 1 sm cucumber cut into chunks
- 1 Tbsp. cornstarch
- 1 tsp soy sauce
- 1 can Spam luncheon meat - (12 ounce) cut 1/2" cubes
- 1 lrg carrot sliced diagonally
- 1 x garlic clove chopped
- 2/3 c. water
- 3 Tbsp. sugar
- 3 Tbsp. ketchup
- 3 Tbsp. vinegar
- 1 can bamboo shoots - (8 ounce) liquid removed Warm cooked rice (optional)
- In a large skillet, cook oil over medium heat.
- Add in carrot, green onion, garlic and cucumber; cook, stirring occasionally till crisp tender (4 to 5 min).
- Add in remaining ingredients except Spam and bamboo shoots.
- Cook, stirring, till sauce is thickened.
- Add in Spam and bamboo shoots.
- Cook till heated through.
- If you like, serve over warm cooked rice.
- This recipe yields 4 servings.
