Bacon & Cheddar Hominy
- 2 qt. OSCAR MAYER Bacon, cut into 1-inch pieces Rite Aid 2 For $7.00 thru 02/06
- 1-1/2 qt. onions, chopped
- 1-1/2 qt. green peppers, chopped
- 1/3 cup garlic, minced
- 1 Tbsp. black pepper
- 1-1/2 gal. Canned hominy, rinsed, drained
- 3 qt. tomatoes, chopped
- 3 qt. KRAFT CHEDASHARP Pasteurized Process American Cheese Shred
- Cook bacon in large skillet until crisp.
- Remove bacon from skillet, reserving 1/3 cup of the drippings in skillet (or 1 Tbsp.
- for trial recipe).
- Add onion, green pepper, garlic and black pepper to drippings in skillet; cook 3 to 4 minutes or until vegetables are tender, stirring occasionally.
- Add bacon, hominy and tomatoes; cook until thoroughly heated, stirring occasionally.
- Transfer hominy mixture mixture to full size hotel pan (or half-size pan for trial recipe); top with process cheese.
