Bacon & Cheddar Hominy

  1. Cook bacon in large skillet until crisp.
  2. Remove bacon from skillet, reserving 1/3 cup of the drippings in skillet (or 1 Tbsp.
  3. for trial recipe).
  4. Add onion, green pepper, garlic and black pepper to drippings in skillet; cook 3 to 4 minutes or until vegetables are tender, stirring occasionally.
  5. Add bacon, hominy and tomatoes; cook until thoroughly heated, stirring occasionally.
  6. Transfer hominy mixture mixture to full size hotel pan (or half-size pan for trial recipe); top with process cheese.
