Sweet Potatoes Moroccan Style

  1. Fry the onions in the oil till soft.
  2. Add garlic, and when the aroma rises, add the tomatoes and ginger.
  3. Put in the sweet potatoes and add 1 1/2 cups wateror enough to half-cover the potatoes.
  4. Add chili pepper and salt.
  5. Cook, uncovered, for 15 minutes, or until the potatoes are tender and the liquid has almost disappeared, turning the potatoes over.
  6. Serve hot or cold.
