Potato Soup With Ham and Cheese
- 4 large potatoes (peeled and cut into bite sized pieces)
- 1 quart water (to cook potatoes in)
- 1 lb ham (cut into small chunks)
- 3 cups milk
- 2 cups cheddar cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon red pepper flakes
- 2 tablespoons butter
- 3 tablespoons flour
- Boil potatoes until tender enough to eat but not to soft.
- Drain potatoes and reserve the liquid.
- In a large pot melt butter.
- When the butter is melted add the flour and whisk to combine until smooth.
- Add the milk whisking to combine until smooth.
- Add 2 cups of the potato cooking water.
- Add the ham and cook for 5 minutes.
- Add the cheese and stir till melted.
- Add the potatoes, salt, pepper, and red pepper.
- Place on the lowest heat and let set for 5 to 10 minutes for the flavors to blend.
- Serve with crusty bread and maybe a salad.
