Ambrosia Muffin Cakes

  1. Mix fruit.
  2. Split each muffin into 2 layers.
  3. Spoon about 1/4 cup of the fruit mixture and 1 Tbsp.
  4. whipped topping onto bottom half of each muffin; cover with top of muffin.
  5. Top each with 1 Tbsp.
  6. of the whipped topping and 1 tsp.
  7. of the coconut.
