Roman Noodles
- 1/2 c. chopped onion
- 1 green pepper, chopped
- 2 Tbsp. vegetable oil
- 1 (4 oz.) can sliced mushrooms (undrained)
- 2 (8 oz.) cans tomato sauce
- 1/4 tsp. powdered thyme
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 8 oz. medium noodles (uncooked)
- 3/4 c. water
- 1 (8 oz.) can peas, drained
- 1/4 c. grated Parmesan cheese
- Combine onion, green pepper and oil in a 2-quart casserole. Cook in microwave on Full power for 2 to 3 minutes, until onion and green pepper are tender.
- Stir in mushrooms with liquid, tomato sauce and seasonings.
- Cook in microwave, covered, on Full power for 3 minutes and heated through.
- Stir in noodles and water.
- Cook in microwave, covered, on Full power for 9 to 12 minutes, until noodles are tender.
- Stir halfway through cooking time.
- Stir in the peas.
- Sprinkle with Parmesan cheese before serving.
- Serves about 4 to 5 people.
