Seafood Delight (Pasta And Shrimp) Recipe
- 4 1/2 c. water
- 1 1/2 pound unpeeled med. size fresh shrimp
- 16 ounce. pkg. linguine
- 6 ounce. pkg. frzn snow peas, thawed and liquid removed
- 6 green onions, minced
- 4 med. tomatoes, minced
- 3/4 c. extra virgin olive oil
- 1/4 c. minced fresh parsley
- 1/3 c. wine vinegar
- 1 teaspoon dry oregano
- 1 1/2 teaspoon dry basil
- 1/2 teaspoon garlic pwdr
- Bring water to boil; add in shrimp and cook 3 to 5 min.
- Drain well; rinse in cool water.
- Chill, peel and devein shrimp.
- Set aside.
- Cook linguine according to package directions (omit salt), drain, rinse with cool water and drain again.
- Combine shrimp and remaining ingredients; toss gently.
- Cover; refrigerateat least 2 hrs.
- Yields 10 servings.
