Vegan Bananas Foster

  1. Preheat oven to 350F.
  2. Spread coconut on small baking sheet, and toast in oven 5 to 7 minutes, or until light brown and fragrant, stirring occasionally to prevent burning.
  3. Set aside.
  4. Combine 1 Tbs.
  5. margarine, brown sugar, and 2 Tbs.
  6. water in small saucepan, and bring to a boil over high heat.
  7. Reduce heat to medium, and simmer 3 minutes.
  8. Remove from heat; stir in rum.
  9. Return to heat; cook 1 minute.
  10. Keep hot.
  11. Heat remaining 1 Tbs.
  12. margarine in large skillet over medium-high heat.
  13. Add banana halves, cut-side down, and cook 3 to 4 minutes, or until browned.
  14. Carefully transfer to 2 serving plates.
  15. To serve: Top banana halves with ice cream, and drizzle with rum sauce.
  16. Sprinkle with toasted coconut.
