Betty's Zucchini Bread Recipe
- 2 c. Flour
- 2 tsp Cinnamon,3 if you like
- 2 tsp Baking soda
- 1 tsp Salt
- 1/2 tsp Baking pwdr
- 3 x Large eggs
- 2 c. Sugar
- 3/4 c. Vegetable oil
- 2 c. Zucchini,grated well liquid removed
- 1 1/2 c. Walnuts,minced
- 1/2 c. Raisions,(optional)
- Preheat oven to 350.
- Sift first 5 ingredients.
- Beat Large eggs in a large bowl till light.
- Gradually add in sugar and beat till thick and lemon colored.
- Add in oil in thin stream and beat well.
- Fold in zucchini, nuts and raisins.
- Add in sifted dry ingredients and blend well.
- Turn into greased and floured 12-c. bundt pan or possibly 2 8x4 inch loaf pans.
- Bake till tester inserted in center comes out clean, about 50 min.
- Let cold 5 min before turning out onto rack.
- Cold completely before slicing.
