Mushrooms Stuffed With Spinach, Quinoa and Blue Cheese

  1. In large skillet, cook mushroom stems, onions, salt and pepper until vegetables are softened.
  2. Transfer to a bowl and let cool.
  3. To the onions, add quinoa, spinach, cheese and nutmeg, stirring until combined.
  4. Arrange mushroom caps in a single layer.
  5. Divide spinach mixture among mushrooms.
  6. Bake at 350 for 18-22 minutes.
  7. Let cool 5 minutes before serving.
