Mushrooms Stuffed With Spinach, Quinoa and Blue Cheese
- 2 teaspoons olive oil
- 1 lb large cremini mushroom, stems removed and chopped
- 1 cup chopped onion
- salt and pepper
- 34 cup cooked quinoa, cooled
- 10 ounces frozen spinach, thawed drained and chopped
- 3 ounces blue cheese, crumbled
- 14 teaspoon ground nutmeg
- In large skillet, cook mushroom stems, onions, salt and pepper until vegetables are softened.
- Transfer to a bowl and let cool.
- To the onions, add quinoa, spinach, cheese and nutmeg, stirring until combined.
- Arrange mushroom caps in a single layer.
- Divide spinach mixture among mushrooms.
- Bake at 350 for 18-22 minutes.
- Let cool 5 minutes before serving.
