Squash and Apple Gratin

  1. Preheat the oven to 350F and set an oven rack to the middle position.
  2. In a small bowl, whisk together the cream and broth.
  3. In a large bowl, toss the squash with the cheese, cream mixture, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper.
  4. Pour into a gratin or baking dish, cover with foil, and bake until the squash is tender, 35 to 45 minutes, turning the dish and removing the foil halfway through.
  5. Remove from the oven and set aside.
  6. Leave the oven on.
  7. Meanwhile, melt 3 tablespoons of the butter in a skillet over medium-high heat, add the onion, and cook until it begins to brown, 8 to 10 minutes, stirring occasionally.
  8. Add the rosemary, the remaining 114 teaspoon salt and 1/4 teaspoon pepper and cook until fragrant, about 1 minute.
  9. Add the apples, and cook until they are tender and beginning to caramelize, 8 to 10 minutes.
  10. Spread evenly over squash.
  11. Turn the broiler to high.
  12. In a food processor, pulse the bread with the remaining 1 tablespoon butter, the garlic, and nutmeg to create coarse breadcrumbs.
  13. Sprinkle over the squash and apples.
  14. Broil, uncovered, until the topping is golden brown, 5 to 7 minutes.
  15. Let rest for at least 20 minutes before serving.
