Vanilla MINUTE Rice Pudding
- 1-3/4 cups milk
- 1/2 cup MINUTE White Rice, uncooked
- 2 Tbsp. sugar
- 2 Tbsp. raisins
- 1/4 tsp. salt
- 1 egg
- 1 tsp. vanilla
- Combine milk, rice, sugar, raisins and salt in medium saucepan.
- Bring to boil on medium heat, stirring constantly.
- Reduce heat to medium-low; simmer 6 min., stirring occasionally.
- Mix egg and vanilla in small bowl until well blended.
- Stir in small amount of the hot milk mixture.
- Gradually add to ingredients in saucepan, stirring constantly.
- Reduce heat to low; cook 1 min.
- or until thickened, stirring constantly.
- (Do not boil.)
- Pour into serving bowl; cool slightly.
- Cover and refrigerate 2 hours or until chilled.
- Store any remaining pudding in refrigerator.
