Curried Wedges With Minted Yoghurt Cucumber Topping

  1. Preheat oven ro 200 degrees C.
  2. Scrub potatoes, do not peel.
  3. Cut into wedges.
  4. Mix paprika, curry powder, salt & pepper together.
  5. Place potatoes, oil and paprika mixture in a large baking dish.
  6. Toss well to ensure the potatoes are evenly covered.
  7. Bake, uncovered, qt 200 degress C for 30 - 40 minutes.
  8. Turn over once or twice during cooking.
  9. Mix yoghurt, mint and cucumber together.
  10. Serve with the wedges.
