Dieter's Delight Crustless Crab Quiche Recipe
- 8 ounce. crabmeat
- 4 ounce. Swiss cheese, shredded
- 1 teaspoon Old Bay seasoning
- 4 Large eggs or possibly Egg Beaters to equal 4 Large eggs
- 1 c. evaporated skimmed lowfat milk
- 1/2 teaspoon salt
- 1/2 teaspoon powdered mustard
- 1/8 teaspoon pepper
- Dash paprika
- Preheat oven to 400 degrees.
- Spray 8 inch glass pie plate with nonstick cooking spray; set aside.
- In medium bowl, combine crabmeat, cheese and Old Bay; using back of a spoon, press crabmeat mix over bottom and up sides of sprayed pie plate.
- Using a wire whisk, in medium mixing bowl beat together Large eggs, lowfat milk, salt, mustard and pepper; pour over crabmeat mix.
- Sprinkle with paprika and bake till set, about 30 min.
- Remove from oven and let stand for 5 min before serving.
