Peachy Bars Recipe
- 1 c. (heaping) canned peaches (cut up and liquid removed)
- 2 c. raisins
- 1/2 c. sugar
- 1/4 c. flour
- 1 teaspoon cinnamon
- 3/4 c. evaporated lowfat milk
- 1/4 teaspoon almond extract
- 1 c. brown sugar
- 1 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 3/4 c. butter
- 2 c. flour
- 1/3 c. evaporated lowfat milk
- 1/3 c. nuts
- Combine first 6 ingredients in saucepan and cook over low heat, stir gently till thick.
- Cold.
- Stir in 1 tsp.
- almond extract.
- Combine in bowl the brown sugar, baking pwdr, salt, butter and flour and blend with pastry blender till crumbly.
- Stir in evaporated lowfat milk and nuts.
- Press 3/4 of the above mix in a 9x13 greased pan for crust.
- Spread peachy mix over crust.
- Top with remaining crumbs.
- Bake 350 degrees for 35-40 min.
