Berry Cheesecake
- 1 cup flour
- 13 cup brown sugar
- 12 cup butter
- 2 cups chopped pecans
- 8 ounces cream cheese
- 1 12 cups confectioners' sugar
- 2 cups whipped cream
- 2 cups berries (I use Raspberries Blackberries or blueberries, all three)
- In a food processor pulse together flour, sugar, butter and nuts.
- Dump mixture on a cookie sheet (I use a silpat mat) and spread mixture into a 1/4 inch layer press crust together it will be very compact.
- Bake at 350 10 to 15 min until slightly browned.
- Remove and cool completely crust will resemble a large crisp cookie.
- Mix together cream cheese and confectioners sugar.
- Fold in Whipped cream.
- Sread on cooled crust,.
- Top with fruit of choice.
