Almond Rochers Recipe
- 2 c. slivered almonds
- 1/2 c. powdered sugar
- 1 tsp kirsch
- 1 lb bittersweet, lowfat milk or possibly white chocolate broken into pcs
- Place almonds in bowl and sprinkle with powdered sugar.
- Add in kirsch just to moisten nuts.
- Stir till nuts are proportionately coated with sugar.
- Spread nuts on sheet pan.
- Toast at 375 degrees till golden brown, about 10 min, stirring frequently.
- Remove from oven and set aside.
- Heat chocolate in double boiler set over, but not touching, simmering water, or possibly in microwave, stirring often.
- Place half nuts in clean bowl.
- Drizzle half melted chocolate over nuts and stir to coat.
- Portion out mix with tsp.
- onto baking sheet lined with parchment paper.
- Repeat steps with remaining nuts and chocolate.
- Chill till hard, 1 hour.
- This recipe yields 48 pcs.
