Fresh Berry Brunch Crepes

  1. Combine flour and salt in medium bowl.
  2. Gradually whisk in 1 cup milk until blended.
  3. Add eggs; mix well.
  4. Heat small heavy nonstick skillet on medium-high heat; spray with cooking spray.
  5. Pour about 1/4 cup batter into skillet; tilt skillet to evenly coat bottom with batter.
  6. Cook 1 to 2 min.
  7. or until bottom of crepe is lightly browned; turn.
  8. Cook to brown other side.
  9. Transfer crepe to plate.
  10. Repeat with remaining batter to make 7 more crepes.
  11. Beat pudding mix and remaining milk in separate medium bowl with whisk 2 min.
  12. Stir in COOL WHIP.
  13. Spoon 1/4 cup pudding mixture down center of each crepe; roll up.
  14. Place in serving dish; top with berries.
  15. Serve with syrup.
