Curry Sauce

  1. In a hot skillet, saute onion, garlic, tomatoes, and ginger until softened.
  2. Add cumin, coriander, allspice, thyme, curry powder, and turmeric.
  3. Cook for 3 minutes.
  4. Add water and cook over low heat for 20 minutes.
  5. Add cayenne and cilantro.
  6. Just before serving, add scallions.
