Black Bean, Corn & Pepper Salad Recipe
- 2 (15 ounce.) cans black beans
- 1 1/2 c. corn (10 ounce. frzn, thawed)
- 1 lg. red bell pepper, seeded & diced
- 2 sm. jalapeno chilies, seeded & diced
- 1/2 c. finely packed minced fresh cilantro
- 1/4 c. lime juice
- 2 tbsp. salad oil
- Salt & pepper to taste
- Rinsed & crisped lettuce leaves
- In a bowl, mix beans with corn, bell pepper, jalapeno chilies, cilantro, lime juice, oil and salt and pepper.
- Cover and refrigerate1 hour or possibly up till next day.
- Pour into a bowl lined with lettuce leaves.
- Serves 6.
