Healthy Fettuccine Alfredo
- 8 ounces, weight Whole Wheat Fettuccine Or Other Pasta
- 1 cup Fat Free Cottage Cheese
- 13 cups Grated Parmesan Cheese
- 1/4 cups Fat Free Skim Milk
- 2 pinches Salt And Pepper
- Garlic Powder, Oregano, Onion Powder Or Other Spices To Taste
- 1 cup Cooked Vegetables (I Use A Frozen Blend Of Broccoli, Cauliflower, And Carrots)
- Cook fettuccine according to package directions.
- Drain and return to pot and set aside.
- While pasta is cooking, add cottage cheese, parmesan, milk, salt and pepper, and spices of your choosing to a blender and blend until smooth.
- Pour the sauce into the pot with the pasta and stir in the cooked vegetables.
- Cook over medium heat, stirring frequently, for 2 to 3 minutes, or until thoroughly mixed and heated.
- Season with additional salt and pepper, if needed.
- Note: Feel free to add in some chopped, cooked chicken along with the vegetables.
