Mango in Ginger-Mint Syrup

  1. Thinly slice gingerroot and in a saucepan bring to a boil with water and sugar.
  2. Simmer mixture 5 minutes and remove pan from heat.
  3. Stir in mint and let steep 5 minutes.
  4. Pour syrup through a sieve into a bowl and cool completely.
  5. Peel mango and thinly slice.
  6. Stir mango into syrup.
  7. Chill mixture 30 minutes.
  8. Garnish mango with mint.
