Macadamia Nut Chiffon Pie
- 1 envelope gelatin
- 4 egg whites
- 1/2 c. sugar
- 1/2 c. Macadamia nuts
- 1 c. whipping cream
- 1 baked (9-inch) pie shell
- 1/4 c. water
- 4 egg yolks
- 1/4 tsp. salt
- 1/2 c. milk
- 1 tsp. vanilla
- Mix gelatin, sugar and salt.
- Beat together egg yolks, cold milk and water.
- Stir into gelatin mixture and cook over medium heat, stirring constantly, until mixture comes to a boil.
- Remove from heat.
- Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon.
- Beat egg whites until stiff. Fold nuts and whipped cream into mixture and add vanilla.
- Pour into cooled pie shell.
- Chill until firm.
- Then top with additional whipped cream and sprinkle with Macadamia nuts.
