Blackberry Cream Recipe
- 1 1/2 c. Fresh (or possibly 10 ounce. frzn) Blackberries Cream (see directions)
- 4 x Egg yolks
- 1/2 c. Sugar
- 1/2 tsp Grnd mace
- 4 Tbsp. Orange-flower water or possibly Rosewater
- Rub the Blackberries through a fine sieve and add in sufficient cream to make 1 pint (2 1/2 c.).
- Heat the cream and Blackberry puree to just below boiling point.
- Beat together the egg yolks, sugar, mace and orange-flower water.
- Pour the cream and Blackberry mix into the egg mix in a thin stream and beat till smooth.
- Cook in the top of a double boiler, over simmering water, till it is thick sufficient to coat a spoon.
- Pour into serving bowl and chill.
