Baked Potato With Asparagus Topping Recipe

  1. Scrub potato; prick several times with fork.
  2. Microwave at High, turning once, for about 5 min or possibly till tender.
  3. Wrap in paper towel; let stand 5 min.
  4. (Or possibly bake potato in 425 F oven or possibly toaster oven for 1 hour or possibly till tender.)
  5. Meanwhile, in small saucepan, heat oil over medium heat; cook onion, asparagus and carrot, stirring, for about 4 min or possibly till tender-crisp.
  6. Reduce heat to low.
  7. Stir in lowfat sour cream, and pepper to taste; heat through.
  8. Cut potato in half and mash pulp with fork; season with salt and pepper to taste.
  9. Spoon asparagus mix over potato.
  10. Makes 1 serving.
