My Best Meatloaf
- 1 cup Ketchup
- 1- 1/2 teaspoon Prepared Yellow Mustard
- 1/4 cups Brown Sugar
- 3 dashes Tabasco Sauce
- 1 pound 80/20 Ground Beef
- 1 whole Egg
- 1 cup Panko (Japanese Bread Crumbs In The Asian Isle At Grocery Store)
- 1/2 cups Onion, Chopped
- 2 teaspoons Worcestershire Sauce
- 1 teaspoon Seasoning Salt (I Use A Local Meat Market's Brand)
- 1 teaspoon California Garlic Pepper (Similar To A Fine Ground Grill Seasoning)
- 18 teaspoons Allspice
- Fresh Ground Pepper, to taste
- Preheat oven to 425 degrees (This is important!
- The loaf sears, leaving the juices inside.)
- In a small bowl, mix together the ketchup, mustard, brown sugar and Tabasco sauce.
- Set aside.
- In a large bowl, mix the rest of the ingredients and 1/4 c. of the ketchup sauce with your hands.
- Mix well, but dont over handle it.
- Spray a small broiler type pan with non-stick cooking spray.
- Place meat mixture on rack in pan in an oblong loaf shape (sort of like a flat football).
- Spread 1/4 c. more of the ketchup sauce on the top of the loaf, trying to get most of it to stay on top and not run down (like frosting a bundt cake).
- Bake at 425 degrees for 25 minutes.
- Turn oven down to 350 degrees, and continue baking for 25 more minutes.
- Remove from oven and let rest for 10 minutes.
- Serve with the extra sauce.
- Enjoy!
- Note: Can easily be doubled.
- Put on a normal size broiler pan with rack, and make two oblong loaves.
- Sauce can be used for cocktail meatballs and on bacon cheeseburgers.
