My Best Meatloaf

  1. Preheat oven to 425 degrees (This is important!
  2. The loaf sears, leaving the juices inside.)
  3. In a small bowl, mix together the ketchup, mustard, brown sugar and Tabasco sauce.
  4. Set aside.
  5. In a large bowl, mix the rest of the ingredients and 1/4 c. of the ketchup sauce with your hands.
  6. Mix well, but dont over handle it.
  7. Spray a small broiler type pan with non-stick cooking spray.
  8. Place meat mixture on rack in pan in an oblong loaf shape (sort of like a flat football).
  9. Spread 1/4 c. more of the ketchup sauce on the top of the loaf, trying to get most of it to stay on top and not run down (like frosting a bundt cake).
  10. Bake at 425 degrees for 25 minutes.
  11. Turn oven down to 350 degrees, and continue baking for 25 more minutes.
  12. Remove from oven and let rest for 10 minutes.
  13. Serve with the extra sauce.
  14. Enjoy!
  15. Note: Can easily be doubled.
  16. Put on a normal size broiler pan with rack, and make two oblong loaves.
  17. Sauce can be used for cocktail meatballs and on bacon cheeseburgers.
