Slow Cooked Pulled Chicken Sandwiches With Roasted Balsamic Onio
- 1 -1 12 lb boneless skinless chicken breast
- 1 (12 ounce) bottle beer, I used Yuengling
- 1 (16 ounce) bottle barbecue sauce, I used Sweet Baby Ray's Original
- 2 large red onions, sliced thin
- 2 green peppers, sliced thin
- 12 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons honey
- 2 garlic cloves, minces
- 4 scallions, sliced thin
- 8 sandwich buns, bulky
- In your slow cooker add, chicken beer and BBQ sauce.
- Set on low for 6 hours our high for 4 hours.
- When chicken is done, you should be able to shred it easily with a fork,.
- Stir scallions into your cooked chicken.
- For the Balsamic Onions and Peppers:.
- whisk the balsamic vinegar, olive oil, honey and garlic together.
- Place sliced onions and peppers in the bottom of a large baking dish.
- Drizzle dressing over top and bake at 350 degrees for 20 minutes.
