Reuben Quesadillas
- 2 cups broccoli coleslaw mix
- 14 cup thousand island dressing
- 12 (12 inch) flour tortillas
- 12 ounces sliced corned beef
- 3 cups shredded swiss cheese
- Chop the corned beef.
- Mix the broccoli slaw and the Thousand Island dressing.
- Place a tortilla on a warmed griddle or in a warmed pan.
- Layer about 1/4 c swiss followed by 1/3 c corned beef, then slaw, then 1/4 swiss; top with second tortilla.
- Grill until golden brown and turn.
- Grill until brown on both sides and cheese is melted.
- Repeat with remaining tortillas.
- Let sit for just a minute before slicing into wedges.
- Serve with more dressing if desired.
