Reuben Quesadillas

  1. Chop the corned beef.
  2. Mix the broccoli slaw and the Thousand Island dressing.
  3. Place a tortilla on a warmed griddle or in a warmed pan.
  4. Layer about 1/4 c swiss followed by 1/3 c corned beef, then slaw, then 1/4 swiss; top with second tortilla.
  5. Grill until golden brown and turn.
  6. Grill until brown on both sides and cheese is melted.
  7. Repeat with remaining tortillas.
  8. Let sit for just a minute before slicing into wedges.
  9. Serve with more dressing if desired.
