Beef Stuffed Pork Roast Recipe

  1. Butterfly loin.
  2. Split meat lengthwise almost to opposite side, then spread open.
  3. Brush top with 1/4 c. barbecue sauce.
  4. Combine grnd beef, onion, garlic, salt, pepper and 1/4 c. of barbecue sauce.
  5. Spread proportionately over roast.
  6. Press mushrooms into grnd beef mix; sprinkle on bread crumbs and Parmesan.
  7. Roll up and tie loin; place on rack in shallow roasting pan.
  8. Roast, uncovered, in 325 degree oven for about 2 1/2 hrs.
  9. Baste with barbecue sauce last 15 to 20 min.
