Mixed Salad With Bacon & Blue Cheese
- 9 slices bacon (4 ounces)
- 1 tablespoon cider vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1 bunch spinach
- 23 cup olive oil
- fresh coarse ground black pepper
- 2 bunches watercress
- 8 ounces feta cheese
- 1 avocado
- 1 bunch arugula
- In skillet, cook the bacon over medium heat until crisp.
- Drain liquid, place on paper towel and crumble.
- Pour into a small bowl the vinegar, mustard, and garlic.
- Mix these ingredients first, and then add olive oil and black pepper.
- In large bowl, toss the spinach, arugula.
- Pour half of the dressing on the greens and toss.
- Add the feta cheese, bacon, avocado and the remaining dressing, then toss.
- Season with pepper.
