Pineapple Grilled Chicken Skewers
- 6 pieces Chicken Thighs, Skinless Cut Into 1 Inch Pieces
- 1/2 cups Tamari
- 1/2 cups 100 Percent Pineapple Juice
- 1/2 cups Brown Sugar
- 2 cloves Garlic, Chopped
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 whole Lemon, Sliced
- 2 Tablespoons Cilantro, Chopped
- Trim the chicken thighs of all fat and cut into 1-inch pieces.
- Whisk together tamari, juice, sugar, garlic, salt, and pepper until sugar is dissolved.
- Put chicken into a plastic bag and top with marinade.
- Place in refrigerator overnight or for at least 1 hour.
- Preheat grill.
- Thread chicken on skewers alternately with thinly sliced pieces of lemon.
- Discard marinade.
- Place on hot grill for about 68 minutes on the first side.
- Flip over and cook until done or until an instant read thermometer reaches 175 degrees F about 68 more minutes.
- Watch closely so they dont burn.
