Pineapple Grilled Chicken Skewers

  1. Trim the chicken thighs of all fat and cut into 1-inch pieces.
  2. Whisk together tamari, juice, sugar, garlic, salt, and pepper until sugar is dissolved.
  3. Put chicken into a plastic bag and top with marinade.
  4. Place in refrigerator overnight or for at least 1 hour.
  5. Preheat grill.
  6. Thread chicken on skewers alternately with thinly sliced pieces of lemon.
  7. Discard marinade.
  8. Place on hot grill for about 68 minutes on the first side.
  9. Flip over and cook until done or until an instant read thermometer reaches 175 degrees F about 68 more minutes.
  10. Watch closely so they dont burn.
