Morrocan Burgers With Spicy Mayo

  1. Oil grill.
  2. Heat barbecue to medium.
  3. In a small bowl, stir mayo with lemon juice, cilantro, garlic, cumin, paprika and cayenne.
  4. In a medium bowl, whisk egg.
  5. Stir in bread crumbs, salt and pepper.
  6. Add chicken, olives and apricots.
  7. Mix well.
  8. Divide into 4 portions, then shape into burgers 1/2 inches (1 cm) thick.
  9. Make a shallow depression in centre of each to prevent puffing.
  10. Slice zucchini lengthwise.
  11. Barbecue with lid closed until zucchini have grill marks, 5 min, and burgers are cooked, 5 to 6 min per side.
  12. Good tucked into pitas with onions and peppers.
  13. Dollop with spiced mayo.
