Quick Peach Avocado Toast
- 2 slices Whole Grain Bread
- 1 whole Medium Avocado, Pitted And Sliced
- 1 whole Small Peach, Pitted And Thinly Sliced
- 3 leaves Lacinato Kale, Ribs Removed And Very Thinly Sliced (or 1 Cup Greens Of Your Choice)
- 1- 1/2 teaspoon White Balsamic Vinegar
- 1 Tablespoon Crumbled Gorgonzola Cheese
- Toast bread until golden and crispy.
- Let cool slightly.
- On top of each slice of toast, mash avocado.
- Arrange a few peach slices in a single layer on top.
- Top with kale.
- Drizzle kale with vinegar, sprinkle with gorgonzola and top with remaining peach slices.
