Fried Dough
- 12 cup warm water
- 2 14 ounces dry active yeast
- 1 pinch sugar
- 1 cup warm milk
- 14 cup sugar
- 2 teaspoons salt
- 2 eggs
- 13 cup oil
- 4 -5 cups flour
- oil (for frying)
- In a large mixing bowl, stir together the yeast warm water and pinch of sugar.
- Let stand a couple of minutes to let yeast swell or dissolve.
- Stir in remaining sugar, milk, eggs, oil, salt and most of the flour to make a soft dough.
- Knead for 5-8 minutes by hand or with a dough hook.
- Add flour as needed to form a firm, smooth, elastic dough.
- Put in greased bowl.
- Cover loosely; let rise 30-40 minutes
- Heat about 2 inches oil in a fryer - try to keep the oil at 350 degrees.
- Oil is ready when a small bit of dough sizzles and swells immediately.
- Pinch off a golf ball sized piece of dough.
- Flatten with your hands and stretch into a disk about 6 inches across or roll out into an oval until it reaches your desired size.
- Fry one or two at a time until golden brown on both sides turning once.
- Drain on paper towels.
- Top with marinara sauce and grated parmesan cheese or sugar and cinnamon.
