Fried Dough

  1. In a large mixing bowl, stir together the yeast warm water and pinch of sugar.
  2. Let stand a couple of minutes to let yeast swell or dissolve.
  3. Stir in remaining sugar, milk, eggs, oil, salt and most of the flour to make a soft dough.
  4. Knead for 5-8 minutes by hand or with a dough hook.
  5. Add flour as needed to form a firm, smooth, elastic dough.
  6. Put in greased bowl.
  7. Cover loosely; let rise 30-40 minutes
  8. Heat about 2 inches oil in a fryer - try to keep the oil at 350 degrees.
  9. Oil is ready when a small bit of dough sizzles and swells immediately.
  10. Pinch off a golf ball sized piece of dough.
  11. Flatten with your hands and stretch into a disk about 6 inches across or roll out into an oval until it reaches your desired size.
  12. Fry one or two at a time until golden brown on both sides turning once.
  13. Drain on paper towels.
  14. Top with marinara sauce and grated parmesan cheese or sugar and cinnamon.
