Ravioli Salad
- 1 pkg. (1 lb.) lg. cheese ravioli
- 1 sm. onion, thinly sliced
- 1/2 yellow bell pepper, chopped
- 1/2 orange bell pepper, chopped
- 1 lg. tomato, chopped
- 1/2 cup basil olive oil
- 1/4 cup seasoned rice wine vinegar
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp. minced fresh basil leaves
- 2 tsp. fresh oregano leaves
- 1/2 tsp. crushed fresh thyme leaves
- Salt and pepper, to taste
- Prepare ravioli according to package directions.
- Chill in refrigerator about 1 hour.
- In a large salad bowl, combine ravioli, onion, bell peppers, tomato, oil and vinegar, Parmesan, basil, oregano and thyme.
- Toss lightly.
- Add salt and pepper.
- For best flavor, prepare a day in advance and refrigerate.
