Sweet West Tex-Spicy New Mex Burrito Casserole

  1. Preheat oven to 375F Spray 9x13 inch baking dish with non-stick cooking spray.
  2. Bring enchilada sauce to a boil and add quick rice.
  3. Remove from heat, cover and wait 5 minutes.
  4. Pour into prepared baking dish and spread to cover.
  5. Place burritos on top of rice seam side down.
  6. Combine salsa, catsup, lemon juice, and steak sauce.
  7. Pour over burritos.
  8. Cover with cheeses.
  9. Sprinkle black olives and green onions over dish.
  10. Bake, uncovered, for 30-40 minutes at 375F Remove from oven and let sit 5 minutes.
  11. Serve with sour cream and guacamole.
