Red Beans and Rice

  1. Grease non-stick stew pot with 2 teaspoon olive oil.
  2. Saute onions, celery and red peppers.
  3. Add crushed tomatoes.
  4. Add spices.
  5. Simmer for 15 minutes.
  6. Add RINSED kidney beans.
  7. Heat through.
  8. Spoon over brown rice.
