Red Beans and Rice
- 1 large red onion diced
- 4 Stalks celery sliced
- 1/4 cup sweet red bell peppers diced
- 28 ounces tomatoes, canned crushed
- 32 ounces red kidney beans canned
- 1/2 teaspoon cajun seasoning
- 1/2 teaspoon cilantro
- 3/4 teaspoon chili powder
- 2 teaspoons salt
- Grease non-stick stew pot with 2 teaspoon olive oil.
- Saute onions, celery and red peppers.
- Add crushed tomatoes.
- Add spices.
- Simmer for 15 minutes.
- Add RINSED kidney beans.
- Heat through.
- Spoon over brown rice.
