Cranberry Rum Brie
- 1 tbsp. packed brown sugar
- 1/2 tsp. rum
- orange extract
- 1/2 cup whole-berry cranberry sauce,
- lingonberry preserves
- 1/8 tsp. freshly ground nutmeg
- 8 oz. wheel of brie, at room temperature
- 2 tbsp. chopped nuts (walnuts
- pecans)
- assorted crackers
- Preheat oven to 450F.
- Peel off top rind of brie, leaving 1/4-inch edge (leaving sides/bottom of brie intact).
- Place brie in pie plate or shallow oven-proof dish.
- Combine sugar, extract, berries, and nutmeg; top brie with mixture, and sprinkle with chopped nuts.
- Bake 5-7 minutes or until cheese softens.
- Place brie on a serving plate; offer several appetizer knives so guests can scoop the melted brie onto crackers or toasted baugette slices.
