Oatmeal Cinnamon Bread

  1. Preheat oven to 350F.
  2. Grease 9x5 loaf pan.
  3. Place oats in a small heatproof bowl.
  4. Add boiling water, stir, & set aside.
  5. Combine flour, xanthum gum, baking soda, salt, & cinnamon in a small bowl & mix well.
  6. Place butter in a large bowl.
  7. Beat with an electric mixer set at high speed until creamy.
  8. Add both sugars gradually, beating constantly until well blended.
  9. Add eggs, one at a time, beating well after each addition.
  10. Beat in vanilla.
  11. Gradually add flour mixture to creamed mixture & beat until smooth.
  12. Stir in oats mixture.
  13. Spoon batter into prepared pan.
  14. Bake until toothpick inserted into center comes out clean, about 1 hr.
  15. Cool in pan for 10 minutes.
  16. Transfer bread to wire rack to cool completely.
  17. Then slice & serve .
