Oatmeal Cinnamon Bread
- 1 cup Quick cooking oats
- 1 1/2 cup boiling water
- 1 3/4 cup Coconut flour
- 1/2 tsp xanthum gum
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup butter, softened
- 1 cup granulated sugar or sugar substitute such as splenda
- 1 cup firmly packed light brown sugar
- 2 eggs or equivalent of egg substitute
- 1 tsp vanilla extract
- Preheat oven to 350F.
- Grease 9x5 loaf pan.
- Place oats in a small heatproof bowl.
- Add boiling water, stir, & set aside.
- Combine flour, xanthum gum, baking soda, salt, & cinnamon in a small bowl & mix well.
- Place butter in a large bowl.
- Beat with an electric mixer set at high speed until creamy.
- Add both sugars gradually, beating constantly until well blended.
- Add eggs, one at a time, beating well after each addition.
- Beat in vanilla.
- Gradually add flour mixture to creamed mixture & beat until smooth.
- Stir in oats mixture.
- Spoon batter into prepared pan.
- Bake until toothpick inserted into center comes out clean, about 1 hr.
- Cool in pan for 10 minutes.
- Transfer bread to wire rack to cool completely.
- Then slice & serve .
