Fish with Creamy Gazpacho Salad
- 2 hard-cooked eggs
- 3 tomatoes, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup chopped green peppers
- 3 slices OSCAR MAYER Smoked Ham, finely chopped
- 1/4 cup KRAFT Real Mayo Mayonnaise
- 2 Tbsp. water
- 1 slice white bread
- 4 red snapper fillets (1 lb.)
- 1/4 cup flour
- 1/4 cup KRAFT Zesty Italian Dressing
- Cut eggs in half.
- Remove yolks; set aside.
- Coarsely chop whites; place in medium bowl.
- Stir in tomatoes, peppers and ham.
- Blend mayo, water, bread and egg yolks in blender until smooth.
- Coat fish with flour; gently shake off excess.
- Heat dressing in large skillet on medium-high heat.
- Add fish; cook 4 min.
- on each side or until fish flakes easily with fork.
- Place fish on plate; top with tomato mixture and mayo mixture.
