Fish with Creamy Gazpacho Salad

  1. Cut eggs in half.
  2. Remove yolks; set aside.
  3. Coarsely chop whites; place in medium bowl.
  4. Stir in tomatoes, peppers and ham.
  5. Blend mayo, water, bread and egg yolks in blender until smooth.
  6. Coat fish with flour; gently shake off excess.
  7. Heat dressing in large skillet on medium-high heat.
  8. Add fish; cook 4 min.
  9. on each side or until fish flakes easily with fork.
  10. Place fish on plate; top with tomato mixture and mayo mixture.
