Kelli's Mounds Cheesecake

  1. Crust: Mix ingredients and pat into bottom of springform pan.
  2. Filling: Beat cheese until light and fluffy.
  3. Add sugar and beat again.
  4. Add eggs one at a time, beating after each.
  5. Add cream, cornstarch and extract.
  6. Mix well.
  7. Stir in nuts.
  8. Pour into pan.
  9. Bake at 425F for 15 minutes with a pan of water on the bottom rack of oven.
  10. Reduce temperature to 300F and bake 1 hour longer.
  11. Run knife around edge of cake.
  12. Cool.
  13. Top with melted chocolate and whole almonds.
