Ambrosia Pudding

  1. Pour milk into 12-quart bowl of electric mixer fitted with wire whisk attachment.
  2. Add pudding mix and extract.
  3. Beat on low speed just until pudding mix is evenly moistened, scraping bowl as needed.
  4. Beat on medium speed 1 minute or until mixture is smooth and creamy.
  5. Fold in oranges and coconut.
  6. Portion one #8 scoop of the pudding mixture into each of 40 dessert dishes (or 10 dessert dishes for trial recipe).
  7. Refrigerate at least 1 hour before serving.
